I want the freedom to choose a low-cost airline which does not offer the comforts of free food, wine, assigned seats, or compensation for delays. Yes, companies must be stopped from opting out of basic protections for their customers, but customers need to be trusted to a certain extent to be able to choose how much protection they want or need. How about giving customers an option on booking between the low-cost, no compensation ticket or the higher-cost, full compensation ticket?
